These quick and easy banana muffins are soft, flavorful, and moist. They’re wonderful plain, or with nuts or even chocolate chips. You need 2 large ripe bananas and a few basic kitchen ingredients to get started.
Ingredients
- 1 3/4 cup flour
- 1/3 cup sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/3 cup milk
- 1/4 cup oil
- 2 bananas, mashed
- 1/2 cup nuts or chocolate chips, optional
Instructions
- Place paper cups in 12 muffin cups.
- In medium bowl, combine flour, baking powder and salt. Mix and make a well in the center of the bowl.
- In another bowl, combine eggs, sugar, oil and eggs. Mix and add to flour mixture.
- Spoon batter equally into 12 muffin cups. Bake at 400 F for 15-18 minutes, or until toothpick comes out clean.
