Mississippi Pot Roast
Fast and Easy Mississippi Pot Roast in the Instapot
Ingredients
- 3-4 pound pot roast
- 1 onion, sliced
- 5 cloves garlic, coarsely chopped
- 1 stick butter
- 2 sprigs dill, or 2 Tbsp dried
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1/4 cup pepperoncinis with equal parts brine
Instructions
- Sauté the onions, garlic, and butter with the roast until lightly browned using the sauté feature on your instapot. Coat the roast with salt and pepper and top with the onion mixture, dill and pepperoncinis. Cancel the sauté button and switch the the "meat/roast" setting. You should have about 3/4cup liquid in your pot. If not, add enough water to have at least 3/4 cup liquid. Set the time for 1 1/2 hours. Open the steam valve when it's done or allow to naturally slow release the steam. Enjoy!
