Ooey, gooey and utterly delicious, these oatmeal fudge bars whip up easily for a quick weeknight dessert or as a crowd pleaser for company. Watch the video for step-by-step instructions, or skip down for the recipe.

Oatmeal Fudge Bars

A chewy oatmeal cookie with a creamy fudge center and all the ease of being a bar!

Course Dessert

Ingredients
  

Oatmeal Cookie Batter

  • 1 cup butter, softened
  • 1 1/2 cups brown sugar
  • 2 eggs
  • 2 teaspoons vanilla
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 3 cups oats
  • 2 cups flour

Fudge Center

  • 12 ounces chocolate chips, 2 cups
  • 14 ounce sweetened condensed milk
  • 1/4 teaspoon salt
  • 2 tbls butter

Instructions
 

Cookie Layer

  • Combine sugar, butter, eggs and vanilla and whip in a stand mixer until fluffy. Add dry ingredients and thoroughly mix. Put half of the batter in a greased 9×13" oven safe glass pan.

Fudge Layer

  • In a microwaveable glass bowl, add all ingredients except vanilla. Heat 30 seconds, stir, heat another 30 seconds or until chocolate is melted. Stir in vanilla.

Assembly

  • Pour the fudge over the bottom cookie layer. Layer the remaining cookie batter over the top of the fudge. Cook at 350 F for 35-40 minutes, or until an inserted toothpick comes out clean.
