Oatmeal Fudge Bars
A chewy oatmeal cookie with a creamy fudge center and all the ease of being a bar!
Ingredients
Oatmeal Cookie Batter
- 1 cup butter, softened
- 1 1/2 cups brown sugar
- 2 eggs
- 2 teaspoons vanilla
- 1 teaspoon baking soda
- 1 teaspoon salt
- 3 cups oats
- 2 cups flour
Fudge Center
- 12 ounces chocolate chips, 2 cups
- 14 ounce sweetened condensed milk
- 1/4 teaspoon salt
- 2 tbls butter
Instructions
Cookie Layer
- Combine sugar, butter, eggs and vanilla and whip in a stand mixer until fluffy. Add dry ingredients and thoroughly mix. Put half of the batter in a greased 9×13" oven safe glass pan.
Fudge Layer
- In a microwaveable glass bowl, add all ingredients except vanilla. Heat 30 seconds, stir, heat another 30 seconds or until chocolate is melted. Stir in vanilla.
Assembly
- Pour the fudge over the bottom cookie layer. Layer the remaining cookie batter over the top of the fudge. Cook at 350 F for 35-40 minutes, or until an inserted toothpick comes out clean.
