Jambalaya

Ingredients
  

Creole Seasoning

  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon smoked paprika
  • 1 teaspoon pepper
  • 1/2 teaspoon cayenne

Jambalaya

  • 1 onion, chopped
  • 3 stalks of celery, chopped
  • 2 bell peppers (I subbed zucchini for one of the peppers)
  • 1 clove garlic, minced
  • 2 cups rice
  • 1.5 pounds pork sausage
  • 4 cups chicken broth
  • 1/4 cup butter, or oil for frying

Instructions
 

  • In a large pot, brown rice in butter. Add raw sausage and fry until done. Add chopped vegetables and 2 tablespoons of seasoning (more if desired). Sauté until vegetables are soft. Add chicken broth and bring to a boil. Cover and reduce temperature to low for 30 minutes. Fluff and serve!
