These quick and easy banana muffins are soft, flavorful, and moist. They’re wonderful plain, or with nuts or even chocolate chips. You need 2 large ripe bananas and a few basic kitchen ingredients to get started.
- 1 3/4 cup flour
- 1/3 cup sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/3 cup milk
- 1/4 cup oil
- 2 bananas, mashed
- 1/2 cup nuts or chocolate chips, optional
Place paper cups in 12 muffin cups.
In medium bowl, combine flour, baking powder and salt. Mix and make a well in the center of the bowl.
In another bowl, combine eggs, sugar, oil and eggs. Mix and add to flour mixture.
Spoon batter equally into 12 muffin cups. Bake at 400 F for 15-18 minutes, or until toothpick comes out clean.
