Ingredients
  

  • 4 potatoes
  • 1 Tbsp oil
  • 1/2 teaspoon salt
  • Toppings of choice

Method
 

  1. Wash and dry potatoes. Remove any eyes or blemishes. Prick with fork, or score with knife, at least four times around each potato. Coat potatoes with oil and sprinkle with salt. Place the potatoes directly on the oven rack in a preheated 400°F oven. Bake for one hour or until the center of the potato is soft when tested with a fork or knife.
    To serve, cut open potato lengthwise and top with cheese, chives, cooked bacon or sausage, sour cream, tomatoes, and whatever else strikes your fancy!
