Chocolate Icebox Cake

A decadent, yet simple two-ingredient, classic icebox cake made from delicate chocolate wafers and rich whipping cream.

Ingredients
  

  • 3 cups heavy whipping cream
  • 1/2 cup sugar
  • 1 teaspoon vanilla
  • 9 ounce package chocolate wafers cookies

Method
 

  1. In mixer, blend whipping cream, sugar and vanilla until soft peaks form.
  2. Smear about one tablespoon of whipping cream between each cookie, stacking them on their sides, making three rows.
  3. Spread remaining whipping cream over the tops and sides. Garnish with chocolate shavings, if desired.
  4. Refrigerate at least four hours. Slice diagonally and serve cold. Enjoy!
