Method
Cookie Layer
- Combine sugar, butter, eggs and vanilla and whip in a stand mixer until fluffy. Add dry ingredients and thoroughly mix. Put half of the batter in a greased 9x13" oven safe glass pan.
Fudge Layer
- In a microwaveable glass bowl, add all ingredients except vanilla. Heat 30 seconds, stir, heat another 30 seconds or until chocolate is melted. Stir in vanilla.
Assembly
- Pour the fudge over the bottom cookie layer. Layer the remaining cookie batter over the top of the fudge. Cook at 350 F for 35-40 minutes, or until an inserted toothpick comes out clean.
