Oatmeal Fudge Bars

A chewy oatmeal cookie with a creamy fudge center and all the ease of being a bar!

Ingredients
  

Oatmeal Cookie Batter
  • 1 cup butter, softened
  • 1 1/2 cups brown sugar
  • 2 eggs
  • 2 teaspoons vanilla
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 3 cups oats
  • 2 cups flour
Fudge Center
  • 12 ounces chocolate chips, 2 cups
  • 14 ounce sweetened condensed milk
  • 1/4 teaspoon salt
  • 2 tbls butter

Method
 

Cookie Layer
  1. Combine sugar, butter, eggs and vanilla and whip in a stand mixer until fluffy. Add dry ingredients and thoroughly mix. Put half of the batter in a greased 9x13" oven safe glass pan.
Fudge Layer
  1. In a microwaveable glass bowl, add all ingredients except vanilla. Heat 30 seconds, stir, heat another 30 seconds or until chocolate is melted. Stir in vanilla.
Assembly
  1. Pour the fudge over the bottom cookie layer. Layer the remaining cookie batter over the top of the fudge. Cook at 350 F for 35-40 minutes, or until an inserted toothpick comes out clean.
